Bourbon Bacon Pecan Salmon
Ingredients:
For the Salmon:
4 wild caught salmon fillets (6 oz each, skin-on or skinless)
Salt and pepper, to taste
1 tbsp olive oil
For the Bourbon Bacon Pecan Sauce:
4 slices bacon, chopped
1/4 cup bourbon
1/4 cup Sweet Heat CBD Honey
1 tbsp Dijon mustard
1/2 cup pecans, chopped
1 tbsp butter
1/2 tsp garlic powder
1/4 tsp smoked paprika (optional for extra smokiness)
Instructions:
Prepare the Salmon:
Preheat your oven to 375°F (190°C).
Season the salmon fillets with salt and pepper on both sides.
Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the salmon fillets skin-side down (if using skin) and sear for 2-3 minutes until golden brown.
Flip the salmon and cook for another 2-3 minutes on the other side.
Transfer the skillet to the preheated oven and bake for 6-8 minutes, or until the salmon is cooked through and flakes easily with a fork. Remove from the oven and set aside.
Make the Bourbon Bacon Pecan Sauce:
In a medium skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and set it aside, leaving the bacon fat in the skillet.
In the same skillet, add the bourbon and bring to a simmer. Cook for 2-3 minutes to reduce slightly.
Stir in the honey, Dijon mustard, garlic powder, and smoked paprika (if using). Let the mixture simmer for an additional 3-4 minutes until thickened slightly.
Add the chopped pecans and butter to the sauce, stirring until the butter melts and the pecans become toasted, about 2-3 minutes.
Return the cooked bacon to the sauce and stir to combine. Taste and adjust seasoning if necessary (you can add more honey for sweetness or more bourbon for a bolder flavor).
Serve:
Place each salmon fillet on a plate and spoon the bourbon bacon pecan sauce generously over the top.
Garnish with additional chopped pecans and a drizzle of any extra sauce from the pan.
